Sorry for the radio silence over the past couple of days (er…5 days) friends. I hope you all had a wonderful Christmas holiday and are enjoying lots of time with family. Joe and I were lucky enough to work our schedules so we could have 12 days off of work. It’s been forever since I’ve had this much time away from the office and it’s awesome to be able to spend so much time with family and friends. I’ve even lost track of what day it is.
My mom’s side of the family always celebrates Christmas on Christmas night with a big dinner, and my mom frequently hosts the meal. Although we usually do grilled salmon or pork tenderloin, we broke out of the box and tried something totally different this year by serving an Italian feast. My mom and I spent Christmas Eve day prepping all the pasta dishes and baked them in the oven right before guests arrived. Although the prep took almost a full day, it was much easier to have the dishes made in advance. Here are a few photos of the meal (and the family foosball tournament after the meal).
